Title: Slow-Cooked Chili

2 | lb | Beef, ground |
2 | cn | Kidney beans, 16 oz. ea. rinsed & drained |
2 | cn | Tomatoes, diced 14 1/2 oz ea undrained |
1 | cn | Tomato sauce, 8 oz |
2 | md | Onion; chopped |
Pepper, green; chopped | ||
2 | cl | Garlic; minced |
2 | tb | Chili powder |
2 | ts | ;salt |
1 | ts | Pepper |
Cheese, Cheddar; shredded Optional |
In a skillet, brown beef; drain. Transfer to a slow cooker. Add the next nine ingredients. Cover and cook on low for 8 to 10 hours or on high for 4 hours. Garnish individual servings with cheese if desired.
Diabetic exchanges: One 1 cup serving (prepared with extra lean beef and without salt or cheese) equals 3 meat, 1 1/2 starch, 1 vegetable; also 330 calories, 337 mg sodium, 60 mg cholesterol, 29 gm carbohydrate, 26 gm protein, 13 gm fat.
